A new, larger home for a longtime family-owned grocer is taking shape in Tooele County, as Soelberg’s Market advances construction on a roughly 60,000-square-foot development in Grantsville. 

The project will include a 46,600-square-foot grocery store, a 12,480-square-foot Ace Hardware, a 1,000-square-foot Birch Family Pharmacy and a 486-square-foot Beans & Brews, according to Mark Lefevre, construction project manager for Associated Food Stores. 

“The project is progressing well under our general contractor, R&O,” Mark said. “The team includes Superintendent Steve Welch and Project Manager Shawn Pollard. We are very pleased with their progress, and the project remains on schedule for completion in early November.” 

The expansion represents a significant investment for Soelberg’s, which traces its roots in Grantsville back more than a century. The business began when Danish immigrant Karl Soelberg entered the grocery trade in the town in the early 1900s, launching a family legacy that continues today.  

“We’ve been very intentional in both the exterior and interior design to reflect our roots in the community, dating back to 1905,” Storeowner Carol Jefferies said. “You’ll see that influence throughout the store. The look is a modern farm style, including a silo where guests can relax and eat. Our perimeter departments are named after iconic places in Grantsville’s history, and even our aisles carry the names of the town’s first streets. We’ve put a lot of thought into making this store a reflection of the community.” 

The new development reflects both growth in the community and a broader evolution of the company, which has operated its current Grantsville location for decades and expanded to a second store in nearby Stansbury Park in 2011.  

City leaders previously indicated the project is part of long-term plans to keep the grocer rooted in Grantsville while modernizing its footprint to meet future demand.  

Once completed, the new store will significantly increase retail space compared to the Soelberg’s existing locations and add complementary services, including hardware, pharmacy and a coffee shop, creating a multi-tenant retail destination. 

Construction remains on track for a fall opening, with completion expected in early November, Mark said.
